 250 g buttersoftened, get out of fridge the night before
 250 g plain flour
 125 g Cornflour
 100 g caster sugar
 25 g icing sugar

Preheat oven to 160º

Place all ingredients into a stand mixer and beat until incorporated into a dough.

Roll out dough on a floured surface and cut into thin biscuits. Bake for 15 minutes
