Ingredients
  

Bun
  • 650 g Bread flour
  • 8 g Instant dried yeast
  • 70 g Caster sugar
  • 1 pinch Salt
  • 30 g Brown sugar
  • 6 g Ground cinnamon
  • 6 g All Spice
  • 375 ml Milk
  • 1 Egg
  • 50 g Butter
  • 200 g Nestlé Dark Choc Chips
Crossing Paste
  • 75 g Bread flour
  • 100 ml Water
Glaze
  • 100 g Icing sugar
  • 150 ml Water

Method
 

  1. Mix flour, sugars, yeast and salt in a bowl Mix in Cinnamon and All Spice
  2. Add milk, butter and egg - mix for 30 secs (won’t be well mixed) and then add choc chips
  3. Mix with hands til dry ingredients are incorporated, proceed to knead on a floured bench until a nice ball forms
  4. Place in greased bowl and cover - leave for 1 hour Punch down, roll it up, create a log and cut into 12 balls - Place in a lined baking tray and cover with cling film let rest for 40 mins
  5. Combine Paste ingredients and add to a piping bag - pipe over buns and then bake buns for 20-25 mins
  6. Just before buns come out, combine ingredients for glaze and then brush over buns when they come out of the oven.
