Ingredients
  

  • 125 g butter, room temperature
  • 3/4 cup castor sugar
  • 2 large bananas, mashed
  • 1 tsp cinnamon
  • 2 eggs
  • 1 tsp vanilla extract
  • 100 ml buttermilk
  • 1 1/2 cup self-raising flour
  • 1/2 tsp bicarb soda

Method
 

  1. Preheat oven to 180°C. Line a round 20cm cake pan with non-stick baking paper.
  2. Cream together the butter and sugar in a stand mixer.
  3. Add the eggs, banana, vanilla, cinnamon and buttermilk and mix until will combined.
  4. Add the flour and bicarb soda, mix until just combined. Pour the mixture into prepared pan.
  5. Bake in the oven for 50 minutes or until cooked.
