Cheese Scones

Ingredients

 1 ½ cups plain flour
 4 tsp baking powder
 1 pinch salt
 1 pinch cayenne pepper
 55 g chilled butter, cut into cubes
 120 g mature cheddar cheese, grated
 100 ml milk

Method

Heat the oven to 200°C (180°C fan forced) with a large baking tray inside.

Place flour, salt, cayenne pepper, baking powder and butter into a food processor and process unless incorporated.

Pour butter-flour mixture into a large mixing bowl, add the cheese and mix until thoroughly combined.

Make a well in the centre of flour mixture and pour in enough milk to give a soft but firm dough.

Turn dough out onto a lightly floured surface and roll out to approx. 2cm thick. Cut the scones to desired size and then place on hot baking tray. Glaze the scones and sprinkle with remaining cheese.

Bake in the over for 15-20 minutes or until golden brown and cooked through.
