Bun
 650 g Bread flour
 8 g Instant dried yeast
 70 g Caster sugar
 1 pinch Salt
 30 g Brown sugar
 6 g Ground cinnamon
 6 g All Spice
 375 ml Milklukewarm
 1 Eggbeaten
 50 g Buttermelted
 200 g Nestlé Dark Choc Chips
Crossing Paste
 75 g Bread flour
 100 ml Water
Glaze
 100 g Icing sugar
 150 ml Water

Mix flour, sugars, yeast and salt in a bowl
Mix in Cinnamon and All Spice

Add milk, butter and egg - mix for 30 secs (won’t be well mixed) and then add choc chips

Mix with hands til dry ingredients are incorporated, proceed to knead on a floured bench until a nice ball forms

Place in greased bowl and cover - leave for 1 hour
Punch down, roll it up, create a log and cut into 12 balls - Place in a lined baking tray and cover with cling film let rest for 40 mins

Combine Paste ingredients and add to a piping bag - pipe over buns and then bake buns for 20-25 mins

Just before buns come out, combine ingredients for glaze and then brush over buns when they come out of the oven.
